Tropical Overnight Oats

Do something that today that tomorrow's you will thank you for, like making these Tropical Overnight Oats with a simple mango puree for breakfast.

If you've been following along, you'll know that I'm all about the prep when it comes to breakfast. I can't be fussed in the morning to get myself ready AND fed. Instead, on Sunday's I make my work-week breakfasts to simplify my Monday-Friday routine. Plus, it makes it simple for my husband to grab a jar out of the fridge and jet off to work.

These overnight oats are filled with tropical flavor thanks to a quick mango puree, coconut, kiwi and pineapple. If you're not digging the tropical vibes, you can sub in any fruit you have on hand.

Overnight oats are probably the simplest breakfast you can make. Either make into separate jars, or make a big batch and divvy into containers every morning, there is no wrong way to make them.

Sometimes (usually) I'll also scoop in a. big spoon of nut butter, or add in cacao nibs if I'm feeling fancy. No matter how you soak it, they always somehow turn out delicious.

This recipe is one I made for Nairn's Scottish Oats, and I've recently found out it was shared a few places as well!
