Spelt Protein Pancakes

If you know anything about me, you know that a) I HATE sandwiches with a passion, and b) pancakes are my jam. Not just any pancakes though, filling pancakes that are packed with protein and fibre, and topped with homemade fruit compotes. I recently made these Spelt Protein Pancakes, and I've been flipping 'em ever since.


I used a light spelt flour from Dove's Farm, but Bob's Red Mill also makes a banging flour. Spelt is kind of nutty, but otherwise pretty mild. It's not as grainy as other alternative flours. Obviously, this was the perfect dish to play around with my favourite chickpea flour. You can find it in "Ethnic" food shops, as it is commonly used in Indian cooking. Chickpea flour packs a punch of protein and fibre, making these pancakes high in both than your typical morning stack.


Even as a Canadian, I'm always looking for ways to top my pancakes that isn't just puddles of maple syrup (I'm the worst, I know). So I topped mine with a touch of chocolate coconut yogurt,, shaved chocolate, cacao nibs, hazelnuts, and honey (because... FANCY AF). But some of my other favourite ways to top my stack are:

  • yogurt

  • nut& seed butters

  • cooked fruit

  • raw fruit

So try out this easy pancake recipe - for quick and easy pancakes that will keep you full (comfortably) from brunch until... well you can just eat when you're hungry again.

Spelt Protein Pancakes

Prep Time: 10 minutes

Serves 2

Ingredients

  • 3/4 cup spelt (100g)

  • 1/4 cup chickpea flour (30g)

  • 1 tsp baking powder

  • 1/4 tsp baking soda

  • 1/4 tsp cinnamon

  • 1 cup non-dairy milk (240ml)

  • 1 egg

  • 1 tsp lemon juice

  • 1 tsp vanilla


Instructions

  1. Combine all dry ingredients in a bowl. Whisk to combine.

  2. In a separate bowl, whisk together milk, egg, lemon juice, and vanilla,

  3. Add wet ingredients into dry. Let sit for 5 minutes.

  4. Add 1/4 cup batter into a well oiled skillet over medium heat.

  5. When the top begins to bubble, flip, cooking for an additional 2-3 minutes.

  6. Enjoy!
