Passover Almond Funfetti Cake

Updated: Apr 6

Funfetti for Passover? Why not!

This Passover, enjoy a bite of Almond Funfetti Cake! Say goodbye to cardboard-esque sponge cakes and hello to flavor with this almond flour-based cake!

Pinch me, right? I know this looks and sounds too good to be true but this funfetti cake is definitely kosher for Passover. The Passover recipe book of my bubbe's generation was written with strict guidelines: no flour, no eggs, and no leavening agents--not too many choices for cake! Passover was usually all about showcasing the delicious flavors and textures of matzo, but sometimes you might feel a need to mix things up a bit.

Times have changed, and being a bit creative with almond flour definitely pays off! Here's a rainbow-sprinkled cake that's rich, decadent, and delicious. It's great for your holiday seder or anytime throughout the year.

Trust me when I say that this sponge cake filled with colorful sprinkles is a show stopper – it's so fun to look at and even better to eat. This Passover, surprise your guests with this easy and delicious kosher Almond Funfetti Cake recipe!
