Marbled Teff Banana Bread

Full of fibre and iron, teff is a small but mighty grain. Using White Teff Flour in this recipe makes it look like your traditional loaf - but this whole grain is packed with a whole lot of goodness.

I have a hate- love relationship with ripe bananas.

I say hate-love because I hate seeing that they've gone overripe whenever I want to munch on one for breakfast, but end up loving it because I come up with tons of great ideas on how to use them.

Throwing out overripe bananas is a cardinal sin in my household. I always have a baggie full of peeled bananas in the freezer for baking, and blended.

One of my favorite recipes to bake is banana bread. I do think that if you don't like banana bread, we may not be able to be friends. It's one of my faves, and I know tons of people love a good loaf of freshly made banana bread as much as I do.

Baking with teff to modify my traditional banana bread recipe was a complete revelation. Teff has a subtly sweet, mildly nutty flavor. It gave the banana bread an earthy, nutty flavor and loaded it with tons of additional nutrients like fiber, iron, and protien.

Nutritious and delicious.

So don't toss out those overripe bananas! Whip out this easy and delicious gluten-free Marbled Teff Banana Bread recipe instead. Everyone in the household's going to thank you for it.


Marbled Cacao Teff Banana Bread

Total Time: 1 hr

Servings: 12


  • 5 small ripe bananas, divided

  • 2 eggs

  • 1/3 cup milk

  • 1/4 cup olive oil

  • 1 tsp vanilla

  • 1/2 tsp cinnamon

  • Salt

  • 1/4 cup coconut sugar

  • 1 2/3 cup white Teff flour

  • 1/2 tsp baking powder

  • 1/2 tsp baking soda

  • 2 tbsp cacao


  1. Preheat oven to 350F (180C). Line a loaf pan with parchment paper.

  2. Place 3 bananas, eggs, milk, olive oil, vanilla, cinnamon, salt and coconut sugar in a blender. Blend until smooth.

  3. In a medium bowl, combine teff flour, baking powder and baking soda. Add wet to dry ingredients. Mix well.

  4. Divide batter in two - add cacao to one half, mixing to combine.

  5. Alternate pouring the two batters into the loaf pan. Top with halved remaining banana.

  6. Bake for 45-50 minutes, or until a toothpick comes out clean.
