Lemon tahini is one of my favorite vinaigrettes. It offers a touch of brightness and acidity to salads, but the flavor combination of seeds and oils from the sesame is also amazing. It's also versatile in that it can be served as an accompaniment to dinner, slathered onto sandwiches, or as a topping for a bowl of lentils.

Lemon Tahini Slaw

¼ cup tahini
1 tsp lemon zest
Juice of 1 lemon
2 tsp maple syrup
1 tbsp nutritional yeast
1 tbsp olive oil
¼ cup water
Sea salt and pepper, to taste
4 cups cabbage, thinly sliced
2 green onions, thinly sliced
1 cup parsley, chopped
¼ cup sunflower seeds
Make the dressing: combine all ingredients in a bowl, whisking until smooth. Add more water, as needed to achieve desired consistency.
Combine all slaw ingredients in a large bowl, toss with dressing.
