Healthy Walnut Banana Bread
Bananas: the browner the better!
If you want to make banana bread that’s naturally sweetened without skimping on flavor, then ripe bananas are the way to go. Trust me, it’s worth the wait. I keep a bag of ripe bananas in the freezer at all times - pro tip: peel them first!
Probably not the type of bananas you’ll usually reach for, but they’re an unspoken rule when it comes to making good banana bread. Ripe bananas have an increased flavor- they’re sweeter than usual making them perfect for baking.
And boy do I love baking banana bread. The smell of banana bread is the epitome of comfort food. There’s no contest.
For this recipe I used coconut sugar for extra sweetness, but you can definitely do without it or use monk fruit sweetener or whatever you have onhand. Tastes great with or without!

Healthy Flourless Walnut Banana Bread

Total time: 30 minutes
1/2 cup almond flour
½ cup chopped walnuts
1 cup rolled oats
1 tbsp baking powder
1 tsp cinnamon
½ cup milk or plant based milk alternative
2 ripe bananas
¼ cup coconut sugar or monk fruit sweetener
1 teaspoon vanilla
1 tablespoon butter or coconut oil
Preheat the oven to 400F.
Combine all ingredients (except butter) in a blender. Blend until smooth.
In a medium, oven safe pan, heat butter until melted.
Pour batter into the hot pan.
Bake for 20-25 minutes or until fully cooked.
