Flourless Peanut Butter Banana Muffins

These flourless peanut butter banana muffins are the perfect on-the-go snack! Let's face it, snacking can be stressful, prepping can be stressful, and finding something that the whole family will eat can be stressful. We've been living with the COVID-19 pandemic now, and life seems extra stressful. We recently moved countries, so I was in the midst of trying to stock up a basic pantry when that turned into stocking up in the event of isolation. Stressful times call for stress-free baking.

These little muffins are hella cute and are made in a jif using ingredients you likely have in the pantry, making them an easy distraction from the real world. They're filling enough to keep you satisfied, but tasty enough to make all your troubles disappear. I may be known to throw in a couple handfuls of chocolate chips when life gets me down.

In my opinion, there is nothing more comforting than the smell of wafting banana bread. Every time I smell it, I'm transported to my mom's kitchen where nothing ever goes wrong and all it right in the world. These muffins make me feel that way too... until they are gone, but thankfully they're a snap to make.

Whizz these up in the blender, no dirty bowls needed!
