Here’s the scene: holiday time is fast approaching and your friend is hosting a festive meal. You ask “what can I bring?” and they say… salad. So you frantically google: best salad for a dinner party. It’s no wonder people are keen to pawn off this dish – many view it is something you “should have”, with no excitement whatsoever.

Fig and Fennel Salad

Well my friends, say goodbye to boring salads. This easy salad is the perfect thing to make (or bring!) to your holiday party. Fresh, sweet figs pair perfectly with aromatic, crunchy fennel and spicy rocket. Drizzle it with a bit of zippy dressing and crushed pistachios for a salad that looks impressive, but secretly took you all of 3 minutes to whip up. Oh, and you’ll want to double, triple, or quadruple this dressing to enjoy for weeks on end. Trust me, it’s that good, and that simple.


No matter if you are gearing up for holiday season, or trying to get more salads into your daily diet, try out this salad. It's a far cry from that boring iceberg wedge or out of the jar Caesar salad.

Fig + Fennel Salad

Prep Time: 15 min

Serves: 4

Ingredients

  • 140 grams rocket (5 oz)

  • 4 figs, cut into eighths

  • 2 bulbs fennel, thinly sliced

  • 30 grams pistachios, chopped (1/4 cup)

  • 3 tablespoons olive oil

  • 2 tablespoon white wine vinegar

  • 1/2 teaspoon fennel seeds, crushed

  • 1/2 teaspoon dijon mustard

  • 1 teaspoon maple syrup


Instructions

  1. Combine rocket, figs and fennel in a large bowl.

  2. In a small bowl, whisk oil, vinegar, fennel, mustard and maple.

  3. Dress salad and top with pistachios
