Sugar Free Buckwheat Banana Bread
There is seriously nothing more nostalgic than the smell of banana bread baking. It's sweet, it's comforting, and it makes the whole house smell dreamy. But as you know, I'm in the business of revamping my favourite eats to make them a teeny bit healthier than the treats I grew up on. If you love banana bread, but are looking to cut back on sugar, try out my Sugar Free Buckwheat Banana Bread. It's dense, full of banana flavour, and uses only bananas to sweeten it. No sugars (fancy or not!) included.
Sugar is something most of us could stand to reduce in our diet. But when I talk about sugar, I'm not talking about the sugars naturally found in foods like fruit, grains, milk, or vegetables. The sugar the concerns me is the added sugar we get in our diets.
I don't care if your sugar is conventional white, organic raw cane, or hand picked coconut sugar made by free-range monkeys in a far far away land, sugar is sugar. That's right, no matter how much you spent on your fancy sugar, your body will process it all pretty much the same way. Oh, and those "mineral properties" in your fancy sweetener? You'll likely have to consume a whole lot of it before reaping any benefits. They are all classified as free sugars, meaning they come all on their own, unattached to a food as a whole.
Naturally occurring sugars are a component of a food as a whole, like an apple, or bananas. They aren't just stand alone, they come with fibre, fat, protein, vitamins and minerals, and aren't added in my external factors. The fibre, fat, or protein attached to a natural sugar slows absorption of sugar into the blood stream, meaning you won't get that same sugar high from an apple s. a piece of candy (duh).
This loaf is free of added sugars, relying only on the sweetness of bananas. This isn't your typical loaf, this is a great breakfast, snack, and made even better with a lathering of butter or nut butters. It's a hearty, whole grain loaf that I reckon would be killer with a poached egg or mashed avocado on top.
If you're looking to add a little something extra, add in chopped nuts, seeds, dates, chocolate chips, or a peanut butter swirl. But whatever you do, bookmark this recipe, because it will be a staple to have on hand.

Sugar Free Buckwheat Banana Bread
Looking for a better-for-you version of your favourite quick bread? This one is sweetened with only bananas! Making this a perfect part of your breakfast, lunch, dinner, snack... or just anytime of the day...
2 cups buckwheat flour (280g)
1/4 cup desiccated coconut (25g)
2 tsp baking powder
1 tsp baking soda
2 tsp cinnamon
1/4 tsp salt
3 large eggs
2 tsp vanilla extract
3 tbsp olive oil (45ml)
4 ripe bananas, mashed (2 cups), plus 2-3 bananas, sliced lengthwise for topping
Preheat oven to 350F (180C).
Line a loaf tin with oil and parchment paper
In a medium bowl, combine flour, coconut, baking powder, baking soda, cinnamon and salt.
In a large bowl, whisk eggs, vanilla and oil. Add in mashed bananas.
Slowly add dry ingredients into wet, incorporating until just mixed.
Pour into loaf pan, top with sliced bananas.
Bake for 40-50 minutes, or until a tester comes out clean
Feel free to add in chopped nuts, chocolate chips or dried fruits into the batter!
