BBQ Black Bean Jackfruit Burger

Have you jumped on the jackfruit bandwagon yet? In case you missed it, canned jackfruit (in brine!!) is a pretty awesome addition to your plant-based pantry. It has the most unique texture that mimics pulled meats, like pulled pork, beef or chicken. Seriously. It's wild. Maybe you grabbed a can on an impulse buy and you don't know what to do make with jackfruit, or you haven't found the perfect jackfruit recipe to try. Well my friends, this is it, a BBQ black bean jackfruit burger.

While jackfruit may feel meaty, it's actually not a protein source at all. But don't let that stop you! Jackfruit is a great source of fiber (sometime many of us lack in our diets). That's why I made these using black beans and walnuts to bump up a bit of the plant protein. It's the mixture of beans, nuts and fibrous jackfruit that makes these not only moist and juicy but filling as well. Top it off with a big glug of your favorite barbecue sauce, and it's the perfect burger to serve at your next BBQ.

Jackfruit can come in different forms. Fresh jackfruit is bright yellow and taste of sweet bubblegum, but you're more likely to find canned jackfruit in either brine or in syrup. For any recipe you'll want to buy the jackfruit in BRINE, otherwise you'll have a sweet and sticky situation on your hands. Canned jackfruit is crazy versatile, and is perfect in burgers, as shawarma, in curries, or made into a messy pulled sandwich.

If you are going to use jackfruit as the star of your meal, just be sure to include another protein source!
