Tiktok Feta Pasta who? My Baked Artichoke Dip’s here to take the crown.

The Baked Feta Pasta of Tiktok fame was so simple that it was brilliant. Take a big chunk of cheese and surround it with cherry tomatoes and olive oil, and throw it into an oven. Of course it’s going to taste amazing. Complete no-brainer. Simplicity + flavor = a delicious dish. The perfect equation. What’s not to love?

And while I’ve never been the biggest fan of math (recipe-related mathematics only, please), I’ve always been a big fan of deriving good equations and making something new out of something already good.

Enter my Baked Spinach Artichoke Dip recipe.

Baked Spinach Artichoke Dip

It uses the same premise:

  • Toss a block of goat cheese or feta cheese into a pan and surround it with handfuls of fresh spinach, artichoke hearts, garlic, lemon, parsley, and of course, olive oil.

  • Bake til the cheese begins to brown

  • Mix like your life depended on it

If you know how to mix, then you’ll definitely pull off this recipe no sweat. Appetizers don’t have to be complicated to be good, after all. Although you're probably going to be dipping into this dish throughout the day or even the week, because while this Baked Artichoke Dip tastes warm and delicious out of the oven, it reheats well too.

You’re probably thinking, why artichokes though? Is it because anything tastes great as long as it has cheese? While that logic isn’t wrong, I’m going to have to throw another question at you- why NOT artichokes? I’ve always been a big fan. They’re low in calories and fat, high in fiber and vitamins, and are one of the most antioxidant-rich vegetables.

I’m not a pasta anti and I love cherry tomatoes as much as anyone, but artichokes are definitely way better for you. Taste great even without the cheese too.

While I admit that I’m one of the people who jumped on the viral Feta pasta bandwagon (check out my version on my Instagram- it’s vegan and involves vodka), I’d argue that my Baked Artichoke Dip recipe’s an equally strong contender in the brilliantly easy but brilliantly tasty department.

Baked Artichoke Dip

A new take on the viral Feta pasta

Serves 6-8


  • 2 handfuls spinach, fresh

  • 2 cups frozen or canned artichoke hearts, quartered

  • 3 cloves garlic, crushed

  • Juice of 1 lemon

  • 1 tsp lemon zest

  • ½ cup parsley, chopped

  • 1 small log soft goat cheese or feta cheese

  • 3 tbsp olive oil

  • Sea salt and pepper


  1. Preheat the oven to 400F.

  2. In an oven-safe baking dish, combine spinach, artichoke hearts, garlic, lemon juice and zest, and parsley. Add the goat cheese to the dish and drizzle with oil.

  3. Bake for 40-45 minutes or until the goat cheese begins to brown.

  4. Mix until combined

  5. Enjoy!
