Sweet apples, cinnamon, and brown sugar! Fill up your hamantaschen with a little taste of apple pie!

Hamantaschen are Jewish pastries traditionally eaten and enjoyed during Purim, the Jewish holiday celebrating the Biblical story of Esther and her triumph over the evil Haman. Three-sided with a filling in the center, hamantaschen are often made with poppy seeds or prunes, but can also be filled with other sweet fillings such as apples... just like our favorite apple pies.

This Apple Pie Hamantaschen recipe is one of my go-to's for Purim — the crust is buttery and just the right amount of flaky, and the filling is cinnamony, sweet, and tart at the same time. They're not only delicious but they look and taste like real apple pies!

Apple Pie Hamantaschen

Makes 2 dozen - double this base dough to make more hamantaschen!



  • ⅓ cup sugar

  • ½   cup butter

  • 1 tsp vanilla

  • 1 egg

  • 2 tsp water

  • 2 cups flour

  • 2 tsp cinnamon

  • ¼  tsp nutmeg

  • 1 tbsp cornstarch

  • ½  tsp baking powder

  • ¼ tsp sea salt


  • 2 tbsp butter

  • 2 apples, peeled and diced into ¼ inch pieces

  • 2 tbsp brown sugar

  • 1 tsp vanilla extract

  • 1 tsp cinnamon

  • 1 tbsp flour

  • 1 tbsp lemon juice

  • ¼ cup water

Egg wash:

  • 1 large egg, whisked


  1. In a food processor, combine sugar and butter until incorporated.

  2. Add vanilla, egg, and water until smooth, scraping down the sides as needed.

  3. Add flour, cinnamon, nutmeg, cornstarch, baking powder, and salt.

  4. Pulse until a dough forms.

  5. Flatten into a disc, and wrap in plastic wrap. Refrigerate for at least 45 minutes.

  6. *Meanwhile, make the filling:* melt butter in a pan, add apples, brown sugar, vanilla, cinnamon, and flour. Cook on medium for 4-5 minutes or until the apples begin to soften.

  7. Add lemon juice and water. Bring to a boil, and reduce heat to low, for 6-8 minutes, or until the apples are soft. Set aside to cool.

  8. Preheat the oven to 350F. Line 2 trays with baking paper.

  9. Roll dough out on a floured surface to 1/8th inch thickness (if they are too thick, the dough will crack when shaping.

  10. Using a 3-inch circular cookie cutter, cut out circles, setting them aside. Repeat with remaining dough.

  11. Use a pastry brush to brush the egg on the dough.

  12. Scoop 1 tsp apple filling into the center of each circle.

  13. Fold the dough into a triangle, pinching the corners tightly.

  14. Brush with egg wash.

  15. Bake for 12-14 minutes or until golden.

  16. Transfer to a cooling rack.

  17. Enjoy
